This machine is a batch freezer and pasteurizer all in one, and is the premier choice for this type of equipment. Bravo Trittico models are "True Two Speed Machines", & Pasteurize with all the necessary approvals. Features: You can produce gelato & sorbets at a low over-run (air) & produce premium ice creams at a medium over-run with one turn of the control knob. Bravo freezes down in 8-9 minutes to 12 degrees from 185 degrees after pasteurization, with approx. 30-35% over-run. Bravo freezes down in 4-5 minutes to 12 degrees from 40 degrees, with approximately 30-35% over-run. How do you know if pasteurization is for your business? If you are selling your product out in 1-2 days, you may not need to have your product pasteurized. If your product is not selling in 1-2 days, pasteurizing is advised. Scenario to consider regarding pasteurizing: Most gelato shops have at least an 18-24 pan case & some as many as 48 flavors or more on display daily....A flat 5 liter pan serves approx. 30, a stacked 5 liter pan serves approx. 40. Presentation is everything, so assuming you are stacking your gelato.... From a 24 pan case: To sell all of your product in 1-2 days, you have sold approx. 960 customers.
