Wood Stone Fire Deck 9690 model WS-FD-9690, Gas-Fired / Wood Optional Oven. Cooking Capacity 12 (18”-20”) pizza pies at a time!   You are bidding on a used Woodstone pizza oven. We removed this oven from a national chain. It is approximately 5 years old and has been meticulously maintained as the pictures show. This oven is the lergest size and has the options of heating exclusively with Gas or Wood or Both. This model with options would list for over $58,000.00! The stone hearth is 72 inches wide, and 76 inches deep, resulting in 38 square feet of usable deck space. The dense, high temperature ceramic formulation of which the hearth and dome are cast creates a "deep heat sink" within the chamber of the oven. The Fire Deck is available in a variety of burner and fuel configurations. The standard unit has a single wall of radiant flame (incorporating 2 independently adjustable radiant burners), as well as a thermostatically controlled gas infrared burner beneath the oven deck. Total, this oven has 347,000 BTU (max) Natural Gas supply.   The 4,000-pound, monolithic, cast-ceramic floor sits on 4 inches of rigid insulation and is poured to a thickness of 6 inches. The 2,400-pound, monolithic dome is cast to a thickness of 4 inches. The hearth and dome are connected by a carefully tensioned steel exoskeleton, which ensures structural integrity and long life. The body of the oven rests on a 10-gauge steel pan welded to a heavy-duty frame. The oven is wrapped with at least 2 inches of spun ceramic fiber insulation and enclosed (front, top and sides) with 16-gauge galvanized steel. The oven vents through a 12-inch O.D. flue collar located directly above the doorway. The Fire Deck 9690 can be direct connected to a power-ventilated (included, usually a $3762.00 option), grease-rated chimney or it can be vented using a Listed Type 1 exhaust hood or one constructed and installed in accordance with NFPA 96 and all relevant local and national codes. Please read the following excerpt from Woodstone’s web site:    Cracking In Ovens   Crazing Cracks (Also known as Expansion / Contraction Cracks) Ceramics 101Some cracking is a natural part of all ceramic materials that come in contact with elevated temperatures, especially with daily heating and cooling. In a Wood Stone oven, the cracking that you may see in the floor of the oven is something that we expect to see eventually in all of our ovens.  This is nothing to be concerned about! Moreover, in our older ovens we allowed for some of the shrinkage/expansion cracks by placing 3 expansion joints directly into the floor casting, and by casting joints into the dome. In the newest of our ovens, we have removed these expansion joints in the floor casting because we found that the oven would make a smaller joint than we could in our casting process. In fact, it has been our experience that because of the large amount of surface area still in direct contact there is no appreciable difference in cooking performance.     Importance of  Materials One thing that you can't see about the crack is the actual path that it follows and its relative size inside the floor and dome. Because these are coarse grained ceramic materials, this crack does not extend through the ceramic as if it was cut by a saw. It meanders back and forth through the 4" thickness and decreases in size from the hot face to the insulated outside surface. The roughness of this crack actually holds the cracked surfaces rigid, and prevents it from coming apart and shifting. This is the key. All floors and domes crack - ours is designed not to shift afterwards causing cooking problems. All Ceramics Crack.  How is the Unit Physically Supported? The other thing that you can't see looking at the inside of the oven is how it is supported. There is a metal exoskeleton that connects the floor of the oven to the dome, and that also surrounds the exterior surface of the floor and dome. This exoskeleton provides support and direction for the ceramics, and further ensures that no shifting can occur. In the image at left the containing force of this support is indicated by the Red Arrows. If any crack affects production in any way, just give us a call.
